The interactive internet feature Craft Your Perfect Whiskey, which allows bourbon aficionados to select their perfect bourbon, led to the creation of C.Y.P.B. The final product is an 8-year-old wheated bourbon that is bottled at 95 percent.

It is bottled at the same 114 proof the spirit was when it entered the barrel.

Description

Instead of rye, William Larue Weller used wheat to create his first bourbon recipe. This non-chill-filtered wheated bourbon forgoes chill filtration to preserve all the naturally occurring residual oils and flavors that develop during the distillation and aging process. This bourbon strikes a balance between a full mouthfeel and robust vanilla and oak notes. In honor of the man who made Wheated Bourbon renowned, a whiskey that satisfies the demand of fans of non-chill filtered whiskey.

Tasting Notes

Vanilla, dark cherries and caramel may be detected on the nose. Caramel and toasted oak are balanced on the palate. It is said that the finish is lengthy and has notes of chocolate and crème brûlée.

Product Details

The Van Winkle family historically produced the Weller brand at the Stitzel-Weller distillery.  When United Distillers changed its name to Diageo in 1997, the new parent company had less interest in bourbon. As a result, it sold the Weller brand and a sizeable amount of Stitzel-Weller whiskey to the Sazerac firm, which continues to make it today at its Buffalo facility.

W. L. Weller Special Reserve

Weller Special Reserve is distilled at the Buffalo Trace distillery in Kentucky and bottled at 90-proof. It briefly fell victim to some hype in which it was repeatedly compared to rejected Pappy or poor man’s Pappy. This was primarily brought on by once sharing a distillery. Same to this, I once went to a bar with Jon Hamm; regrettably, this does not mean that I behave in a similar manner. Let’s ignore the hype and concentrate on what really matters.
